Keto Pancakes by Keto Life

Dear All,

Who likes pancakes?
Who remembers their delicious smell in their mother's kitchen as a child?
We were all children once, and we are all still big children! -) (and gourmands!!!)

But here it is, in the ketogenic diet, after the hassle of bread, in position 2 we have pancakes! lol!
I started the keto diet in January 2019 and when Candlemas came in February, believe me, I tested a lot of recipes!! Big hassle! -(
Between those that stick to the pan, those that swell, that wither, and those that tasted so-so, I gave up for a while, too much stress in front of my pan, too many disappointments and monumental failures!

This year, and especially this "quiet at home" start to the year due to the hatching of mini greemlins, I set about it a few weeks ago to try to perfect one... I think I've done all the possible mixes and dosages, determined to have a recipe without psyllium, and without coconut flour (I'm getting a bit saturated...)

I can tell you that we have been eating and tasting crepes at home for almost a month! By the way, a big thank you to my greemlins and my husband who I don't think will eat crepes for the next 10 years! -)

Enough chatting, let's go, you will be surprised by the few ingredients and the simplicity of the latter but I think that it's all in the dosage in the end!
To make these pancakes, and this is important, I used a 24cm diameter pan, not bigger because the size is suitable for the little fingers of my gourmands. I made 10 medium pancakes. I haven't tested it but on a larger pan or a crepe maker, don't hesitate to double the quantities and let your friends know about your successes, I hope, or if it didn't work, or if you improve the recipe!! Everything is good to take in the mutual aid of the pancake!! -) I won't be offended because I'm not a great chef myself, just... a gourmand! -)))

You will need:

– 60g melted butter
– 35g of almond powder (very precise I know but otherwise too liquid or not enough…)
– 1 tablespoon of Erythritol which I now take from the Délices Low Carb website, you will find it here: Erythritol Konzelmann's
– 6 Eggs
– 100g of cream cheese (and it also works with mascarpone but I like it less) => take it out 10 min before
– 1 vanilla pod or 1 teaspoon of vanilla powder
– 1/2 teaspoon of cinnamon (OPTIONAL but we like the little taste)

You don't see anything very complicated! -)

Mix the eggs and puree well.
Put this mixture in the blender and add the cream cheese, which has already been worked a little => you should obtain something very fluid.
Then add the almond powder, the vanilla pod and the cinnamon => mix again
Melt the butter last and blend well one last time!
It must have almost the same texture as a standard pancake batter! -)
Personally, last time I let it rest for lunch and then I made them after, about
20/25 min but unintentionally, so in all honesty I don't know if it plays a big role given the ingredients in the recipe. (I don't think so!!)

In a very hot pan, I'll let you take care of the cooking side, because it depends on the pans or crepe makers, it's a bit like the oven, everyone knows their own => to your ladles!!!!
Personally, I use an odorless and tasteless coconut oil greasing spray directly in the pan that I take here: Cooking Spray Coconut on the Délices Low Carb website.
I renew every 2 pancakes but you can use butter or normal coconut oil to brush your flagship utensil! -)

These pancakes will not taste like the real traditional pancakes of the past but from my husband's word we are pretty close! Make them rather thin, well not too thick, be careful when turning them but honestly they are not super fragile either, and above all enjoy them warm! I like them less cold, even if they can be eaten too! -)

=> MOM'S TIPS: Don't tell your greemlins that this is a keto recipe! Garnish their pancakes with regular sugar, regular jam or even the call of Nutella if some of them are fans because the fact of already eating pancakes without flour greatly reduces the carbohydrate impact on the whole. They will not have the traditional taste of a pancake that they know but they will not see a thing. Tested and approved on two children of a couple of non-keto friends without telling them anything, it went well! -)
My greemlins' favorite version is with whipped cream on top, and fresh raspberries (normal whipped cream for them)!
