Care Bears Chocolate Cake
"This is a recipe that is already on my Instagram account, but I know that it has been very successful following the sending of photos by some of my subscribers of their creations (Big Up by the way!)
It's also close to my heart, because after a lot of testing (and a thorough stuffing of my 3 men for weeks...), I think that the texture is quite similar to traditional chocolate cakes.
So here it is, hoping that you can enjoy it with your family, or why not make it when you are invited, without anyone noticing, since it is very popular with non-keto people (I even suspect that they really like this cake!)
To make this masterpiece you will need:
- 100G of dark chocolate => I use Torras cooking chocolate which you will find on the Délices Low Carb website here: Torras cooking chocolate
- 150g butter
- 20G of Pure Via (in all supermarkets now)
- 1 GOOD LARGE tablespoon of mascarpone
- 6 eggs
- 1 half sachet of yeast (if the mold is high 1 whole one)
- 150g of ground almonds
I put the ingredients here in the order of use! (when I told you I was a nice girl!)
Then, we put on our best apron and we start:
You will need to melt the chocolate and butter over low heat, stirring constantly to obtain a nice smooth mixture like baby's skin -)
Then, put this mixture in a salad bowl in which you will add the Pure Via and the mascarpone => this is where everything comes into play to perfect your little arm muscles, you have to mix very well to avoid lumps which could resist!
Once well combined, you will add the eggs, one by one and mixing well between each => recovery phase for your little arms! (don't thank me for the sport!)
Once smooth and appetizing to the eye, add the yeast and almond powder.
Stir well one last time!
The texture should remind you of when you used to make cakes with flour, quite a far cry from the texture often found in keto cakes.
Place in a buttered mold or not, depending on your equipment. It goes well in all types of molds, so allow yourself some sweet original follies (in the photo below a pretty heart)
HOP (Alsatian side) in the oven at 180° for 30 minutes with fan-assisted heat, or how chocolate and almonds will perfume your home sweet home -)
DRIIIINNNNNGGG (pale imitation of the oven ringing) your cake is ready to be decorated with why not fresh strawberries, star fruits, raspberries => treat yourself!!
“Mom’s Tip Minute”
=> You can make this cake in a mini cake or muffin version for your little monsters' snack, easier to fit in their bags or often it's a battle between comforters, handkerchiefs, and the ugly stone found at the park.
In this case, monitor the cooking carefully, reduce it by 10 minutes, pricking well to check that everything is ok before taking them out.
=> For those with a sweet tooth, I advise you to make this recipe with 90% chocolate but increase the dose of Pure Via to 50g the first time, gradually reducing it over the next few times (because YES, they will ask you to make some more!)
Ultimately my kids are on the original recipe above and it works without any problems!
