THE FLOATING ISLAND THAT DOESN'T MAKE MACROS ROCK!

The floating island, this classic of French pastry, is now reinvented in a keto-friendly version, proving once again that pleasure and healthy eating can sail together on the gourmet waters of low-carb cuisine.
“The Macro-Friendly Floating Island” is a Keto recipe that lets you sail through an ocean of sweet flavors without fear of the glycemic storm. It’s a light-as-a-cloud, creamy, and satisfying dessert that’s respectful of your macros and keeps your Keto diet on track!
Ingredients for 4 floating islands:
- 1 vanilla pod
- 4 egg yolks
- 20 cl whole fresh cream
- 20 cl unsweetened vegetable milk
- 80 g of Low Carb Delights erythritol*
- 4 egg whites
Sugar-free gourmet option: Sugar-free caramel syrup
Ingredients marked with "*" are currently available in the shop at the end of the recipe
Steps:
1. Separate the whites from the yolks
2. Cut the vanilla pod, collect the seeds and place them on the egg yolks
3. Pour the milk and cream into the saucepan. Heat over low heat for a few minutes.
4. In your salad bowl, whisk the erythritol, vanilla and egg yolks then pour the hot milk/cream over the mixture while mixing.
5. Return the entire mixture to the saucepan, still over low heat, and stir with a spatula until you obtain a smooth cream. If you have a thermometer, do not exceed 85°C.
When you turn the liquid and it stops, then your cream is ready.
6. Then pour the whole mixture into the salad bowl, passing it through a sieve or blender.
7. Place the custard in the fridge.
8. Using an electric mixer, beat the egg whites until stiff, add the sweetener and continue until the mixture is firm (bird's beak)
9. Cover the plate with cling film and place spoonfuls of whipped egg whites on it. Cook the egg whites in the microwave for about twenty seconds at 850 W. Pour the cold custard into the individual plates, then place the egg whites on top.
10. As a topping, drizzle with sugar-free syrup or whatever you like :)
