RASPBERRY MOUSSE FIZZ KETO
Discover an elegant and light dessert to gently end a good keto meal!
INGREDIENTS FOR 2 MOUSSES:
- 125 g frozen raspberries
- 45 g of golden caramel Délices Low Carb* (erythritol brown sugar)
- 100 ml of whole liquid cream
- 1/4 lemon juice
- 5 to 6 mint leaves
- 1 sheet of gelatin
- Lemon zest
- 2 raspberries for decoration
- 2 mint leaves for decoration
Ingredients marked with "*" are currently available in the shop at the end of the recipe
STEPS:
1. Mix raspberries, lemon juice, golden caramel and mint to obtain a smooth purée.
2. In a saucepan, heat all this beautiful world in a saucepan until boiling.
3. Rehydrate the gelatin in cold water.
4. Filter the preparation using a chinois and pour it into a bowl.
5. Add the drained gelatin, then leave to cool.
6. Whip the cream until stiff.
7. Gently fold the raspberry puree into the cream.
8. Pour the mixture into ramekins and refrigerate for 3 hours.
9. Finish with lemon zest, a mint leaf and a raspberry for an elegant festive presentation.
