Inspiration for a keto holiday meal!

AH THE HOLIDAYS! Sometimes, we're not necessarily very inspired... We always see the same plates passing by and we have to adapt them to a ketogenic diet. With the rush for gifts, work... we can quickly become demotivated and crack.

However, holiday keto can be very simple!

To start

It couldn't be simpler: keto crackers or toast with foie gras, which is not only delicious but also provides vitamin B12, vitamin A, and copper.

Place the foie gras on a layer of lamb's lettuce, with sliced ​​radish on top, add pickles, olives, nuts, and you already have a beautiful platter. If you don't like foie gras, then take smoked salmon marinated in orange juice and pink berries, on a keto blini. Protein guaranteed, for both alternatives, as well as good fat and very few carbohydrates.

As a starter

At Christmas, we can indulge in an aperitif, starter, main course, and dessert. So, given the cold, why not make a cream of mushroom soup. Simply brown a mixture of mushrooms with shallots and garlic, previously cooked, in a pan with butter, and once everything is nicely browned, put in a saucepan: the choices for spicing are individual, but pepper, pink salt, paprika, a little chili, a pint of nutmeg... it's great! So we add full-fat cream, dry white wine, and we find the consistency that we like.

As a main course

Here we are on the simplest: a turkey. The cooking time will depend on its size, but count on a long cooking time and at low temperature: 150º and one hour per kilo of weight.

The little tip: stuff it with citrus fruits. It gives a very soft and original side. We marinate it well with a mixture of butter, lemon juice and lime and mandarin or orange, and stuff it with citrus fruits. We add homemade broth or white wine to the baking dish.

While the cooking is taking place, we prepare the accompaniment: a nice purée of cauliflower with truffle, for example, or a purée of heart of palm to which we add cheese, such as Cœur de Savoie, Parmesan, or even a little goat's cheese, to give an aligoté side.

Cheeses

This is not a difficult choice. Your cheese platter will be composed of your favorite cheeses. The ideal in a cheese platter is to have a mix of cow, sheep, goat. Raw milk is always better, but be careful with pregnant women.

The dessert

Variety is essential: with keto flours, you can concoct a good number of desserts. But if simplicity appeals to you: three-chocolate mousse (dark, sugar-free white and sugar-free milk) following a classic recipe, but replacing the sugar with a keto-compatible sweetener and with chocolates adapted for a ketogenic diet. Sprinkle everything with pistachio slivers and a few rose petals and you have a dessert worthy of a starred chef.

The holidays are an opportunity to share but also to get into the kitchen and discover that you can completely adapt this type of traditional meal with your ketogenic diet.
